I've used Ghost and some of the others mentioned, but my favorites are the tools from Terabyte software http://www.terabyteunlimited.com/products.htm

Features that you might want to look for include:

The ability to open or browse an image to just get part of it extracted. i.e. a directory or a single file

The ability to partition and resize images in a batch or script such as: partition C: to 10 gig, partition D to the rest of the drive, restore C: and restore and resize D:

The ability to image from within DOS with network support. I have to support several "weird" machines, one off stuff built or inherited with non-standard operating systems and hardware setups. I image these types of systems by powering down, booting to DOS with network support and then imaging the entire hard drive across the network.
