I have a little bit of experience with Subversion, but only from playing
around at home and some use for accessing source from open-source
projects. That said, you certainly can have one repository for all of
your documents if you like. I say documents, because Subversion can track
changes to any stream file, so you can keep versions of your source code
as well as your documentation (especially useful if you use a plaintext
markup language like XML, HTML, Docbook, etc.).

If you are interested in Subversion, I'd strongly suggest taking a look at
"Version Control with Subversion", which is freely available from
http://svnbook.red-bean.com/nightly/en/index.html. In particular, the
chapter 5 is relevant to your questions about repository setup (
http://svnbook.red-bean.com/nightly/en/svn.reposadmin.planning.html#svn.reposadmin.projects.chooselayout).
