We found NFS to be about three times as fast as NetServer shares. The main issues we had with NFS were security related or with the clients. We also found that our NFS client (Omni Lite, on a Windows server) began negotiating a much lower buffer size after upgrading the iSeries to V5R3. This was solved by hardcoding the buffer size in the client.
