Yahoo sends ads in their e-mails so that activity is probably downloading
the image while at the sametime logging that the image was requested.  So
they can bill.  The big question is do they keep any information about YOU
and if so, what do they do with it?

That return receipt stuff isn't an issue because you can say no.  Plus, it
just sends an e-mail back to the sender saying you opened the e-mail (if you
allow it).
