Posting times can vary based on a number of factors... 

1) how often my system processes mail... usually every 15 minutes, poll the
net every 30 minutes... but that varies too... if I am online or home I
might force a connect.
2) how often my ISP processes mail
3) how my ISP routes the mail (I belive they use multiple routes to process
more efficently)
4) Availability of my connection resources... (currently, only cable
modem).  If it goes out, no mail goes anywhere :)

Although I don't have solid proof of this, I belive that some mailers are
not putting dates on messages, or they are putting invalid dates on the
messages, in which case MY mailer will probably put a valid date there....
that would skew the apparent posting time.
