It's not just Notes.  It appears that any text-based mailer (I can vouch for
AOL and cc:Mail) has the same problem.  You get stuff like <<BOLD>> and &NTSB
(didn't know that the National Transportation Safety Board had anything to do
with HTML).  It's almost as annoying as those folks who's mailers include
their PGP signature as part of the message and blow out the 10K character
limit >8(!
