the way I documented the files was to
DSPFFD FILE(AMFLIB/*ALL) OUTPUT(*OUTFILE) OUTFILE(AMFLIB/FILEDEF)
I then used the Client access file transfer utility to download the outfile and import it into an MS Access database. It took a while to clean up, but it shows everthing in the MAPICS environment. So when I was looking for a specific item I could query the file definition database. Sadly this database is too large for distribution.
Also note that this command does take a while to proccess
