I see that the font_80 and font_132 variables only affect the 'default'
setting  (on the control right-click menu).  How about the 'unreadable'
through 'large' settings?

This control-right-click menu is not part of TN5250, it's part of xterm. Indeed, xt5250 doesn't render fonts at all -- it simply sends character (curses) output to xterm, and xterm renders it.

The font_80 and font_132 keywords send an escape sequence that xterm interprets in order switch fonts. But the escape sequence is intended to change the currently active font, not to reconfigure the menu.

To reconfigure the menu, you can change options in your .Xresources file.
You may even be able to put the settings in /usr/local/share/tn5250/XTerm file, though I haven't experimented with it.
