There are document standards, which consist of a document, usually a 3 digit number, and a version, usually a 4 digit number. That defines the document specification. That part is determined by the X12 standards committee. Within that, there's a lot of flexibility. Usually the contents of specific fields are mandated by your trading partner. Each document consists of segments (records), containing elements (fields), which may also contain sub-elements (as in an array or structure.) Each segment, element and sub-element is delimited by a character specified in the envelope (header), the first segment of which is a positional record, in order to allow you to determine what the delimiters are without knowing in advance. I usually see "~" for segments, "*" for elements and ":" for sub-elements, but they can really be any single character which does appear in the document data.
