Getting diagnostics from a running, production, server?

Folks:

Does anyone have any suggestions on how to get diagnostic & status
information from a running, production, server?

I have the ability to send commands to my server to make it do just
about anything I want ... but I'm not sure what information would be
most useful and how to get the information from it.

Most of the time I don't have the ability to run the server in a
debugger, but I would like to be able to dump things like memory usage,
thread status, and other items of interest, to the log file on demand.
Basically, things that a debugger would be able to provide, if I could
attach one.
