You can create a getter for the field. Something like:

public class Demo {
  public static java.io.PrintStream getOut() {
    return System.out;
  }
}

Then just call Demo.getOut something like:

DDemo$getOut   PR         O  STATIC 
D                                           EXTPROC(*JAVA:
'java.lang.System': 'getOut')
D                                           CLASS(*JAVA:
'java.io.PrintStream')
Dstdout               S           O   CLASS(*java:
'java.io.PrintStream')
 /free
  stdout = Demo.getOut();
  inlr = *on;
 /end-free
