Question was a joke :) Parents entering a note that says "Happy Valentine's Day" instead of "Happy Birthday" or "Merry Christmas" or "To my favorite only daughter". Valentine's Day is one of the few special occasions that uses an apostrophe

I have no idea why it started recently, or why it'd be intermittent.
Since we now know the error is coming from within Apache itself (and we even know which character causes it) I'd suggest contacting IBM support.
