I follow ya. I suppose you could go about the dynamic portion by either
generating the Ext column syntax or you could write Javascript to process a
JSON list that knew how to dynamically add columns to an existing data grid
once the metadata was on the client.

Not sure which would be best based on programmer complexity vs.
performance. I suppose you could do an SSI (Server Side Include for those
that don't know) for the area of the Ext.grid.ColumnModel where the columns
are defined to conform to the former concept. The latter concept would
require some custom Javascript finesse.

Well, consider the Ext.grid.ColumnModel(...) component in ExtJS, for
example; where the number of columns would change, depending on teacher's
classes, and depending on the number of assignments made throughout the
year.
