Ironically, the 5 websites you referenced in your post use tables, somewhere on their sites. But I do agree with your initial suggestion to keep learning additional ways to position and format content.

To me, tables are good for database inquiry and maintenance applications, data entry forms, and many reports. Div, span, paragraph, and list elements may be better for brochure-type content.

The study of layout is interesting and can be fun.
