Apache Log control... -- WEB400

One of the features I really liked about the Classic HTTP server was the
logging.  Each day the Server would add a new member to the access logs,
strangely enough for that date.

In Apache, however, I have one access log.  One big, fat, unmanageable
access log.

Does anyone know of a configuration that will replicate the old feature or
is this something I'm going to have to roll myself?
