Is there an easy way to sort or move my filters around in the Remote Systems
view? I have several setup but they are very disorganized. I can
right-click and select "Move Up" or "Move Down" but dragging doesn't seem to
work. If I could easily get them sorted in alphabetical order, that would
be great.

Additionally, is there a way to group them together in folders? I am using
RDP 7.6.0 under Windows 7.

I am not aware of any other way of rearranging the list other than using MOVE UP/DOWN. However, grouping of filters can be achieved through the use of Filter Pools. (In the RSE view, click on the VIEW MENU drop-down and select SHOW FILTER POOLS. This will get you started.) Filter Pools can be specific to a Connection or selectively shared across Connections using Filter Pool References.
