I generally use WDSC's builtin logging function ... and add '-consoleLog'.

I use the WDSC com.ibm.etools.systems.logging.LoggerFactory to create a Logger instance (which is in my main plug-in class) and the just send my log entires there. With the consoleLog flag the entries get sent both to the console output and my plug-in's log file.
