If you do not see the terms override in order entry, check that the TASK entry in the Descriptions file (1/OEM) is set up. To allow access to the payment override window in order entry, you need PAYOVERIDE in the TASK table of the Descriptions file. The value in the limit field should be 3060. If you also need to override customer attributes during order entry, you need CUSTATRIB in the TASK table of the Description file.
