When I write programs for inetd, I use the standard socket functions, recv, send, etc.  I just hard-code the descriptor to 0, since that's always connected to the client that connected to inetd.

Alternately, you could use the read/write functions (like you would for an IFS file.).  Same thing, just use fd=0.
