One problem with the toolkit is that IBM's examples are so horrible that they kill your will to live. You really don't need it for your situation.
There are any number of ways to generate XML. We wrote up one option here:

That approach works well in some cases - but others benefit from the kind of approach taken in powerExt which is mentioned here:

Also in that article is Larry Ducie's xmli which I really like as it allows for either a template approach similar to cgidev2 - or an api approach like powerExt. But it does have a steeper learning curve if you want to use the template approach. Find it here:

If you have V7 there are also DB2 options but I have found the DB2 approach a bit clumsy and overly complicated in the past and you really need tooling to help build the mappings.
