Well in the small shop, the third party application came set up with
journalling and commitment control. Although the commitment control
was not used all the way through the application.

In the medium shop, journalling was not used till I got there.

In the large shop, journalling and CC was already turned on. Though
receivers were deleted after being saved each day. I've been able to
convince ops to leave them around for at least a week.

In each case, as with Tom, journalling as come to the rescue at least once.

I've worked for small shops, medium shops, and large shops; journaling
was used by all of them.

Wow, really?  I've never worked in a shop that used journaling, except
when using HA solution like Mimix...  Never been able to sell management
on the virtues of commitment control, either....  Or primary / foreign
key constraints...

Perhaps its just Texas, but if I had to guess, I'd say your experience
with journaling is not typical.
