There is one problem with this technique.  Let's look at this following 
sample:
ItemMaster
Item         OnOrder
A            5
B            7
C            8

OrderFile
Item         QtyOrder
A            1
A            2
C            25

Should B still record 7 items being on order?  No.
Granted, you don't want nulls.  That's what you use ifnull or coalesce 
for.
