Normally RPG moves each field out of the buffer individually to it's "home" in the program. When you do it directly into a DS, the whole record can be moved as a character block. Much faster. This also gives you the opportunity to trap (say) decimal data errors as and when you use the fields by using MONITOR blocks. When the compiler generates the moves for you you can't do that.
