Like David I too fall into the pro-sumer category. Let me offer a suggestion or two that might help.
Do you have any existing equipment you want to keep? When I made the move from 35mm to digital a couple of years ago my decision to purchase a Nikon camera was largely based on being able to use the lenses and other equipment I had accumulated with my 35mm Nikon. I currently have a Nikon D50.
Think about it from a different angle. I know the processor in the camera is important to digital cameras but they will only be as good as the image they are presented with. I tend to spend more money on lenses than camera bodies because they have the greatest affect on your end result, unless you use PhotoShop which I don't. Think about what kind of lenses you want/need and work backwards into the camera. If you choose Canon lenses your body will have to be Canon, if Nikon your body will have to be Nikon, if third party they will usually be available in both Canon and Nikon mounts.
