If you simply want to setup a dual boot environment for Vista & Win2008, then Google "bcdedit".

You haven't told us anything about how you intend to use the machine, so I just assumed that it would be a development machine. Personally, I wouldn't even consider a dual boot config for development when a VM setup is so much more versatile.
