FWIW, some archiving tools support this, though I don't know if it is
supported for all archive formats. The 'unrar' command on my Linux
system allows both 'unrar e <file>' and 'unrar x <file>'. One of which
preserves the original directory structure, the other extracts all files
in to the current directory.
7zip* has a menu option 'View > Flat view' which shows all of the files
and directories in the archive, so you can easily select only the ones
you want to extract. I can't help with Winzip specifically, but I hope
that can help you find a similar option David.
