I'm going to guess that it's using the ext2 or ext3 file system.

I have used Spinwrite before to recover data from a failed drive in XP,
so I already have the license. But, how well will it work with spanned
drives? I can easily put both drives into my Vista desktop box, and
then run Spinrite over them. Or does it have to be a Linux box?

It should work to pop the drive into a Windows box. Windows applications that are ext[2|3] aware can read/write those filesystems just fine. See, for example Explore2FS*.
