I've been running my testing environments on Hyper-V for the past few
months, and it works rather well. Performance/Responsiveness of the
VMs have improved a lot over Virtual Server 2005 R2 SP1.

I've never worked with the VMware server products on Windows though,
so i can't comment on what's better.
