From what I've read, Maildir sounds like the better format. You moved fast on setting your server up (impressive), but did you put your mail store on a separate FS ?

If you plan on keeping a lot of mail, the large number of small files may require more inodes. Most likely you are using EXT3, but for a Maildir FS, some prefer ReiserFS or XFS. Running on VMWare may have it's own considerations.

It will be interesting to get your feedback on the setup after you've had some miles on it. I've consider going with postfix for a while, but didn't want to spend a lot of time managing email. I don't have a static IP, so i'd have to add fetchmail into the mix.
