TIFF and PNG are "lossless", which will give the best quality that the
scanner or camera can deliver.  JPG has a lossless mode as well.  PNG
is the most "open" format; it is completely open source. TIFF and JPG
are open but controlled by corporations.  Mac types seem to lean
toward TIFF and PC types toward JPEG, but I don't think there is a
meaningful difference, at least not for family photos.

Don't use GIF or BMP; they have 256 color limitation.  Also do not use
a proprietary format that some camera, scanner or album programs use
by default.
