Summary question: Do you ever restore single files back to your HMC or just full system restores? If I never restore an individual file then it has a significant impact on backup.

I don't recall ever having done either. Normally I do a vHMC snapshot and the "Save Upgrade Data" and "Backup Management Console Data" right before an upgrade. I don't recall ever having ran "Restore Management Console Data"

Details:
Currently we backup our vHMCs with Simplivity backups and IBM Spectrum Protect.
The Simplivity backup is good for a full system restore. The IBM Spectrum Protect is better suited to restore individual files, along with full system restore capability.
Both do the offsite replication, etc

It is suspected that the way the IBM Spectrum Protect is configured to do the backup it causes some brief disruption between the HMC and the Power Systems. It's not that critical. You may lose system console sessions but if you've configured "console takeover" it is not disruptive to that job. It's normally at o'dark thirty too so not so noticeable other than you have to reenter the shared console session password at the HMC. However if this backup is unnecessary it would be nice.
