Run CHGPCOPRF and look at the menu options it presents you. We're talking pre Windows stuff.
I dare someone to submit a rfe to add their favorite editor.
But first, explain to me why does it care what your editor is. Where does it take that into consideration? I don't think option 2 to edit on a list of documents in WRKFLR even shows up on the list of options at the top. I checked but IDK if it doesn't appear since I have NO documents or if it's dead. It's in the help though.

What fun you can have when surfing the Knowledge center for "OS/2"...
