Well, it's me doing the VIOS work too. Yes there's work to assigning hdisks to different hosts, I've done a lot of that, but thus far it's been setting up new and adding volumes. This will be the first time wholesale moving from one storage subsystem to another.

Well, with a new internal disk enclosure I can easily have it hosted by IBM i and don't have to mess with VIOS.
In the OP's case isn't there some work to be done in VIOS or are we going under the assumption that someone else on "the staff" configures the stuff on VIOS and then presents it to IBM i and then that's where the OP takes over?

You are basically on track with the changing the tagged load source
resource. Other than that nothing needs to be done.
As to the remaining disks don't use ASP BAL for that instead in Service
tools first add all the new disks but DO NOT balance. (Rare time when
you do not want to balance.) Once they are added then select all the
old disks and remove them.
The system now moves all date from old to new storage while the system
is operational. WHen those disks are empty they become unconfigured.
ONE WARNING! After you have copied the load source that OLD load source
will be available as a disk to add to the ASP. You want NOT to do that
of course as it is one of those you're moving off from. So know the DD
number AND serial number of that critter!!
