Not a direct answer to your question,
And I use internal disk, not SAN disk,
Using internal disk, I host from IBM i, not VIOS. VIOS is great for SAN disk, but abysmal for internal disk. Tried it, scratched the system and started over.
But I've been told to use multiple virtual scsi adapters. Not necessarily one per each volume though. One adapter for tape and/or DVD. And one for each x number of volumes. That number varying by number of volumes.
I like to think of each volume as a disk arm and each adapter as a bus supporting that group of arms.
IDK if I can say "can't hurt" to have one volume per adapter though.
