In my feeble mind, Thunderbird IS the email client. I use it to front-end
multiple email servers. So when you say "not all email clients" do you
mean clients other than the Windows desktop version? I admit I don't use
Thunderbird on my phone, so I wouldn't know about that.

Not all email clients have a "Reply to list" option.
When TBird 52 was released, they made a decision (misguided, in my
opinion) to ignore the Reply-To message header when replying to a mailing
list message.
They've now given a workaround to that behavior.
