Great idea, but my Win7 PC doesn't have NFS as an install option.

Might I suggest you try that on some other PC first? Like can't you put NFS on a client computer, like your laptop, reboot that, and export some folder? Not a bad idea to test, especially since your outage window is a little restricted.
