We always make sure to buy ours a day ahead of time. Keep them on ice
and haven't had a problem. I've been helping with an average of 8-10
sacks a day every Friday, Saturday, and Sunday since about the time lent
started. Helping cook 8 sacks tonight that I know were bought yesterday.
We don't purge with salt as we've found it doesn't work, and just let
them purge naturally with time.

They've got to be fresh and into the boiler within hours of being
harvested.
They don't refrigerate as well as shrimp.
Crawfish season is in full swing down here. There are rice farmers who
alternate their crops between rice and crawfish. The fields are flooded
for both crops, but they set out traps for the crawfish.
The sickest I ever got was from a bad piece of fish at a restaurant down
the street from the HQ of Gorton's of Gloucester. Almost went to the
hospital.
