I originally thought the 5899 was SR-IOV capable, but appears not.
1) What feature do you recommend as a viable replacement?
2) If using SR-IOV for Ethernet, is there any reason to have more than 1 Ethernet adapter?

Either is valid, your call. If you are purchasing new Ethernet then get an adapter that is SR-IOV capable, if you already have adapters such as FC #5899 and don't want to add more then use the bridge.
