You can specify three levels of verbosity for the log file. You could also cat the date and time into the log. That might do what you want.

I find it hard to understand the concept of "too much information" in
this context. There are only two relevant issues: (1) Is the data that
you need available? If so, then why not just read it and throw away
what you don't need? (2) Are you critically low on disk space? (I
would guess that if a log file for an SFTP session is making you think
twice about its verbosity, your disk space problem is a serious issue
unto itself and needs to be addressed ASAP.)
