There's good information on my old employer's support site on NFS setup. Richard could tell you if it's been updated with info on Windows 7, etc., but that's a detail.
http://support.rjssoftware.com will get you there, and a google of nfs iseries might even get you hits from there.
NFS is great - can be set up for anonymous users but also limited by IP address and other stuff at the Windows or Unix end.
