I had that issue with V5R4 but not in V6R1. I am able to unmount any NFS shares to my NAS after the NAS is shut down. What OS version are you running?

Caution.

If you do a MOUNT of a directory on your IBM i to another IBM i (or perhaps any other server) and the IP address of that server changes do an UNMOUNT prior! Failure to do so will require an IPL in order to use that mount again. Anything, really anything, that touches that directory will hang.

For example
Domino lpar does a mount to DB2 lpar.
IP address of DB2 lpar changes because you've ran a Mimix switch.
Domino lpar still tries to access that directory. Screwed. Must IPL Domino lpar.

So, is there like a WRKMNT type command to show you your current mounts?
