Unfortunately, the answer is no.

UPDATE is not recognized as a verb after the WITH ... AS

Wish it was.

Is a subselect / correlated subquery the only way to update a table with
info from another (don't want to update the entire row).

In other words, does DB2/400 have something compatable with:

WITH cte AS (
SELECT keycol1, datacol1, datacol2
FROM x, y, z
WHERE x, y, z
)

UPDATE TableX --same table as FROM below
SET datacol3 = cte.datacol1, datacol4 = cte.datacol2
FROM TableX
INNER JOIN cte ON cte.keycol1 = TableX.keycol1
