Remove trailing blanks too [with the given, seems probable], or just trim for all space characters? One of the following probably would suffice:

SELECT ... '|' concat RTrim(Field_Name) concat '|'

SELECT ... '|' concat
case Field_Name when '' then ''
else Field_Name
end
concat '|'
