Buy a new print server or perhaps a new printer?

Seriously, if nothing's changed then something is broke.

Can you print a config page from the printer itself?

One thing you could check, printers often have a hex dump mode, so
that they print the hex version of any data they get instead of the
actual character. But honestly, it doesn't sound like that's the
problem.

Only other thing I can think to check would be the printer's emulation setting.
