Thanks to everybody who made suggestions on this. The answer for me turned out to be going into Options/TextFidelity at the top of the AFP Viewer window and then selecting "Draft" instead of "Line." Then I go into View and change the zoom to 100% and voila, I have a readable page of printer output displayed on a single screen with no overprinting, crazy wrapping or anything like that. There must be something more to this, because one of the IBM people I was working with did not have to set hers this way in order to get readable output.
