AFAIK, in order to control (dynamically) data on a UIM panel, you have to take the step just beyond pure menues and venture into UIM applications. Menu panel groups can have DATA tags, but I don't think there's any way to manipulate the data elements without updating the UIM variable pool before displaying the menu. This probably means the GO command wouldn't be valid for that menu. You'd need to call the UIM APIs to open the application and update the variables, then display the panel group and finally close the application. I've never found a way even to get message text to change dynamically (as part of a compiled *PNLGRP menu object). It seems to grab the text at compile time. If anybody knows, I'd sure like to hear.
