Dean, The one thing I didn't see you mention was adding another AS/400 connection through the Operations Navigator. If you right click on the primary environment key and step through the connection wizard that will establish the new host link. Then when that is done you can open your default 5250 emulator for CA Express and through the session setup finish the connection for that new host. I hope this helps.
