This is an easy one to explain.  I think.

e-mail handlers are like word processors.  They are not all identical
software processing stuff the same identical way, with reasonable
programming
standards.

I will send out perfectly sane sentences like these examples, but the width
of my text lines, depending on font I use, point size etc. will support a
different character count across the page.  Now instead of the text flowing
nicely across pages with whatever fits with wrap-around like I am
accustomed
to seeing on my word processor, instead we get something like this:

and in some cases the new line control uses some characters that some other
e-mail software cannot exactly translate, so instead what I see is:
