The key is just to create the 'A'(address) and 'MX'(Mail eXchanger) records and point them to the same IP. That lets other servers find yours. In the case of the AS/400 you must then add names to the DNS or Host table that match the domain (ie to host mymaildomain.com you need an entry in the host table matching your ip address x.x.x.x to mymaildomain.com. Since the host table on the AS/400 only allows four names to a single IP you will need to use a DNS server to get past this limitation.
