In our custom protocols, this is exactly what we do.  There is a small
header that has info about the size of the logical record and other
stuff that is very handy to us.  But be careful, your header might span
packets also!  So make it a fixed size.

And since the entire thing is encapsulated in a Class, the applications
programmers don't know anything about it.  The power of OO!

Dear Mr. Williams (et al.):

I cannot share any more detail than this, as the protocols I allude to
are proprietary, but in my experience, it seems to work best to design
protocols so that the sender tells the receiver how many bytes to
expect, either explicitly or implicitly, and the receiver, after
reading
enough to know how much is on the way, does a read-and-wait for the
rest
of the transmission.

As I recall, something like that also shows up in non-proprietary
protocols like TN5250, as well.
